The Lost Art Of Letter Writing
When is the last time you wrote someone a letter? Not an e-mail or text message, a real, handwritten with paper and pen, mailed in a stamped envelope letter?
There was a time when writing letters was our only means of communication. Now, technology enables us to pick up our cell phone, send an e-mail or a fax, or send text messages, and be immediately connected with anyone just about anywhere in the world, Don't you just LOVE technology?
Recently, I received a card in the mail from a friend of mine that took me by surprise. WOW, I thought....that was so sweet! It was nice to go to the mailbox and get something other than BILLS! lol
Well, I was thinking.....(I know that's a dangerous thing! lol) wouldn't it be nice to have a Pen-Pal? Maybe there is someone out there who would like to receive letters/cards/notes in the mail too!
So, are there any takers? Would any of you be interested in having a Pen-Pal? If so, please send me an e-mail with your names and address....it's that easy!

A Beautiful Gift
Normally, the fire goes out during the night and we wake up to a cold house, so the first thing I do when I get up is get the wood stove going. But this morning, My Skippy Man gave me a beautiful gift.......

It was AWESOME!
Outside my window... it is overcast. We are expecting snow, but how much has not yet been determined
I am thinking... about how cold I am and that I just can't seem to get warm! :> (
I am thankful for... at least being able to sit right next to the wood stove! lol
From the Learning Rooms... we are starting our Consumer Math section today. We will be studying time management and learn how to budget our time
I am wearing... pajamas, slippers, a blanket and my cats and dog
I am reading... blogs this morning
I am hoping... for SNOW! I know, I'm freezing and yet I want snow. CRAZY, but I love snow!
On my mind… the salvation of all my family members
From the kitchen.. today, I need to remember to take the roast out for dinner. I think I'll go do that now.......BRB
I am creating... lots of ideas in my head. Now, if I could actually get them down on paper!
I am hearing... the ceiling fan, my computer, birds chirping, and Kiddo in the other room playing some kind of music! lol
Noticing that… Kiddo is in desperate need of a haircut! lol
Around the house... I really need to dust, however this is something I truly HATE to do and will put it off as long as I possibly can
One of my favorite things... is burning scented candles. Apple pie, hazelnut, mulled cider, and pumpkin pie are my favorites
A Scripture thought... "A cheerful heart is good medicine, but a crushed spirit dries up the bones!" Proverbs 17:22
A few plans for the rest of the week... clean the chicken house, load up on kindling for the wood stove, clean out the van and take pictures for Craig's List, set started on some sewing and embroidery work that didn't get started last week

As most of you know and have seen from some of my posts, we just LOVE animals here on Goose Hill Farm. We just can't help it. They are so CUUUUTE!
Well, ever since Goose brought Bailey Boos into our home back in 2005, I have been in love with pugs. We have wanted one for a long time but could never afford one. I told My Skippy Man that I would pray and ask God for a pug, but that if He wanted us to have one, He would need to provide one that was free.
Well, what do you think happened just a little while after I started praying? The phone rings and it's a friend we know that owns a pet resort. She said she knew a nice family that needed to find a good home for their pug and she thought Goose and Ben might want to take her since they already had one. Unfortunately, their lease only allowed one small dog so they couldn't take her. Goose said, "Mom, why don't you and dad take her since we can't. I know how much you and Dad have wanted one!" (was she reading my mind?) "She's already been spayed, is up to date on all her shots, and........she was FREE!" Well, you don't have to ask me twice! I was so excited, I didn't even ask her any questions about the dog. All I could say was.........WOO HOO! WE'LL TAKE HER!
I wanted to write this post today to say a big THANK YOU to three, very special people....Barb, Lou, and Mom, for allowing us the awesome privilege of adopting their precious Phoebe, and for making one of our prayers come true! It has been such a joy to get to know her and to watch her grow to love our family like we love her. We love her so much and can not imagine our life now without her. She has blended in with our family and all of our other fur-babies like she has always been here.
I tried recently to send them some pictures of Pheobe, but for some reason, I can't seem to send any attachments through my e-mail. My sister suggested I post the pics on my blog and then send them the link so they could come here and view them. Now don't I have a smart sister? Yes, I certainly do! :> )
I put together a slide-show, so you wouldn't have to scroll down so far. I hope you enjoy our pictures of Princess Pheobe!

Changin' It Up A Little
I have been thinking a LOT about Mom and Dad lately. Both of them have been PROMOTED TO GLORY; Dad back in 1990 and Mom in 2004. It seems like just yesterday that they were sitting in the kitchen having coffee. They loved to have a good time with family and friends. They were both a HOOT and I loved to hear them laugh! :> )
One memory I have about my parents was their love for music. They both played the piano and the organ and both had voices like an angel. They also enjoyed a wide variety of music.
So, in memory of my parents, I thought it would be nice to change up my playlist a little and take a trip down memory lane with some of my parents favorites!
So....here you go, Mom and Dad....these are for you!

Ultimate Grilled Cheese
I found this recipe for Ultimate Grilled Cheese posted over on "Farm Bell Recipes at Chickens in the Road" by Michelle. If you have not been to this site, you really should check it out. There is so much information available to you there, and it's not just about cooking either!
Ok, back to the yumminess.......I didn't think my family would like this and they didn't.....they LOVED IT! I used cheddar, mozzarella, and a sprinkling of grated parmigiana in ours. The next time I make these, I will definitely make a double batch!
For this AWESOMELY EASY & DELICIOUS recipe, you will need:
4 ounces soft cream cheese
3/4 cup mayonnaise
1 cup shredded cheddar cheese*
1 cup shredded mozzarella cheese*
1 teaspoon Italian seasoning (optional - next time, I will leave this out)
* (Let your imagination go here. Use any two or three kinds of cheese you like. If you like spicy, you could throw in some diced/minced jalapenos)
Combine cream cheese and mayonnaise. Mix in shredded cheeses and Italian seasoning.
Pile on a fair amount of the cheese mixture in your bread. Another thing that's good is to add a couple of slices of ham. Really any kind of sliced meat would work– whatever you prefer.
Butter each side of the bread–mix up the bread you use too. Grill in a hot skillet on each side until golden brown.
ENJOY! I know we did! :> )

Outside my window...I am watching 6 blue jays and one red headed woodpecker, eat the cracked corn I threw down for the chickens. They are BEAUTIFUL!
I am thinking... of how much time son has wasted this morning arguing over doing his school work
I am thankful for... for My Skippy Man ~ He is truly amazing!
From the Learning Rooms... we are trying out a new school schedule and so far, it is not going very well. However, I will not be discouraged.....I will press on!
I am wearing... my pajamas :> )
I am reading...my Bible, cover to cover
I amhoping...PRAYING... for the salvation of my children
On my mind… how I'm going to make it through this school day
From the kitchen.. I will be making out a menu for the week. Tonight, I think we're going to have these for dinner!
I am creating...hand-embroidered pillows to sell
I am hearing... my precious pug, Pheobe, snoring while sleeping next to the wood stove
Noticing that… the family room is a MESS
Around the house... are remnants of our wonderful Christmas
One of my favorite things... spending time out on the porch in the mornings with a hot cup of coffee, listening to the birds serenade me while talking with my Father!
