WHEW!

Hi, everyone! I'm sorry I have not really been around much this past week to post or visit with all of you. My daughter, Bean arrived last Monday and I have been enjoying spending time with her. We have been taking some day trips, visiting family, doing things around the house, and just hanging around. We have also been heading off to the fitness center each day with Goose, where she is kicking our behinds. She recently received her Personal Fitness Trainer Certification and she is taking that title very seriously. You would think she would cut her momma some slack, but I think it is working in the opposite direction for me! lol

I have not taken many pics lately as I have either forgotten my camera when we go out or I remember to bring it, but then forget to bring extra batteries! lol

Well, I just wanted to stop in and say hello, and to say that I miss all of you very much and I will try to get back on soon. I hope you are having a wonderful week!

A Great Place To Visit

I was just over visiting Mary at Just Be Frugal. If you haven't been over to see her, you really need to go. She is such a sweetheart with a heart for the LORD!! I love all the links and ideas that she has on being frugal and other really cool tips that we all can use.

I thought I would share some interesting chicken facts with you!

On average, a hen lays 300 eggs per year.

The greatest number of yolks ever found in a single chicken egg was nine!

A mother hen turns her egg approximately 50 times in a day. This is so the yolk does not stick to the shell.

To produce a dozen eggs, a hen has to eat about four pounds of feed.

The largest chicken egg ever laid weighed nearly a pound and had a double yolk and shell.

A chicken with red earlobes will produce brown eggs, and a chicken with white earlobes will produce white eggs.

A chicken is 75% water.

In the U.S., approximately 46% of the chicken that is eaten by people comes from restaurants or other food outlets.

Hens will produce larger eggs as they grow older.

A chicken loses its feathers when it becomes stressed.

The record for laying the most eggs in one day was seven.

The longest recorded distance flown by any chicken was 301.5 feet.

China has the most people in the world, *and* also has the most chickens. There are over 3,000,000,000 chickens in China! (The United States has only 450 million.)

The waste produced by one chicken in its lifetime can supply enough electricity to run a 100 watt bulb for five hours.

In Gainesville, Georgia, (the chicken capital of the world), a local ordinance makes it illegal to eat your chicken with a fork. LOL

There are four cities in the United States that have the word "chicken" in their name: Chicken, Alaska; Chicken Bristle, Illinois; Chicken Bristle, Kentucky; and Chicken Town, Pennsylvania.

Strawberries......God's Delicious Gift

I was out in the garden planting some peppers and weeding. As I was tending to one of the raised beds, I was greeted by a beautiful array of strawberries that were just begging to be picked. I absolutely LOVE strawberries and let me tell you, I struggled long and hard (about 5 seconds) with whether or not to clean them and immediately freeze them, or clean them and immediately EAT them. Can you guess what I did? (she says while wiping the sugar and juice from her lips!) Well actually, I didn't eat ALL of them, even though I wanted to!

I have started freezing some of the strawberries. When I have enough, I want to make some strawberry preserves. Oh, the thought just tickles me. It doesn't take much to make me happy, let me tell you! :> ) I just love things that are homemade. They are sooooo good for you and they taste DELICIOUS! I love the fact that our vegetables and fruit from our garden are all organic! YAY!!! No yucky pesticides here! To be able to grow our own produce is such a blessing.......a true gift from God!

Heading Out

I am heading out in the morning for my Mother's Day gift; a mother-daughter overnight road trip with my baby, Goose to Colonial Williamsburg. Lots of shopping, one of the gardens (I'm hoping), and then dinner at a REALLY NICE restaurant, where the waiters wear TUXEDOS! (I know they won't l@@k half as good in theirs as My Skippy Man does in his!) :> )

Then on Saturday, MORE shopping. WHEW!! I certainly HOPE there's a "Buck's" or "Cold Stone Creamery" in there SOMEWHERE!

Condensed Milk......A Pantry Staple

I have come to the conclusion that sweetenedd condensed milk
should be a staple in EVERY cook's closet. There are so many different uses for it. You can use it to make an Iced Mocha Latte, a Deep Dish Pumpkin Pie, Caramel Nut Biscuits, Homemade Caramel Sauce, or my all time favorite, Magic Cookie Bars! In most kitchens, as you can see, it is used mostly in desserts.

Well this past weekend I found that you can go beyond the baking zone with SCM. Skippy has wanted me to make Amish macaroni salad for the longest time, so on Saturday, I decided I would make it for him. Well, every recipe I found called for Miracle Whip. In our house, MW falls under the category of "That with which we do not speak of!" lol

Believe it or not, I finally found a recipe in, where else, my Amish cookbook. (now why didn't I l@@k there first?) It is called "YUMMY Macaroni Salad." It is not called Amish Macaroni salad, but yet it is from an Amish cookbook. Does that count? To my delight, it did NOT require Miracle Whip. YAY! However, upon reading further, I discovered an ingredient that I did have on hand. In fact, I have a TON of it. Did I read that right......SWEETENED CONDENSED MILK? Hmmmm! At first I was a little skeptical, but I pressed on and tried the recipe. When all was boiled, chopped, and put together, what I ended up with was a recipe that I have been told is "The BEST macaroni salad I have EVER eaten!" and "DON'T you DARE lose this recipe.....I have to have it!" and "You better make this for my family get-together in a couple of weeks!"

Well, with raves like that, I'll make sure the cookbook gets put under lock and key! lol

For this simple and delicious recipe, you will need:

1 pound macaroni
1 cup chopped green pepper
4 carrots, shredded
1 cup chopped onion
1 (14 ounce) can sweetened condensed milk
1 cup sugar
1 cup vinegar
2 cups mayonnaise
Salt & pepper to taste

Cook macaroni; drain, and cool completely. Add remaining ingredients and toss lightly. Chill for several hours. Best if refrigerated overnight.

After I tossed everything together I tasted it. It was VERY sweet, but after it sits overnight, and all the other flavors mesh together, it was delicious! If you don't want it as sweet, you can eliminate some of the sugar if desired.

We really, really liked this recipe and I don't think we'll change a thing!

More For My Skippy Man

I don't know why, but these past few weeks, I have NOT wanted My Skippy Man to leave me. It doesn't matter if he is going to the grocery store, to the Tractor Supply Store for chicken feed, or even to work, I just don't want him to go. Last night I told him that we need to play the lottery so he will never have to work again, which means we would be able to spend every moment together. Oh, the thought of it! :> ) I know, call me crazy!

These past 4 years, Skippy and I have grown so much closer together. God has done some amazing works in our lives and I praise Him greatly for that!

So, I hope you don't mind, but here's another little something for My Skippy Man!

Mom

Dear Mom,

There are some things that I have wanted to say to you but have not known how. No present that I could give, no card that I could send, could possible convey to you what's in my heart. So on this Mother's Day, I will attempt to give you just a little of what you have given me all my life - - the gift of love.

What could I possibly do for you that would equal what you have done for me? You suffered a tremendous amount of pain to bring me into this world, and on several occasions, reminded me how quickly you could take me right back out of it! LOL! You fed me, changed my diapers and cradled me to sleep at all hours of the day and night. You clothed me, taught me to talk, ( I know you regretted that many times) and to be an individual. You devoted your entire life toward giving me every opportunity to become the best possible person I could be. I guess I ask for too much in hoping that I might be half the mother to my children that you have been to me. I will try my best, because if there is one thing I want to accomplish in my life, it is to make you as proud of me as I am of you.


How blessed I was to have been born to such a wonderful mother. Everything I am, I owe to you. Your strength and wisdom guides me, your love for life inspired me, your kindness and grace warms me. I have never met another person like you, and know in my heart that I never will – you are one of a kind! I can only wish to have the light that you gave, for you touched all those around you with your warmth. I am proud to be your daughter.

So much time went by, even though we lived in the same house, that I didn’t say thank you or I love you, Mom enough. Today I do, yet it’s just a little late. God took you from those who loved you most. He took you to His kingdom where you are with Dad, Vickie, and the many others that have gone on before you. I know you are happy and free of the pain you suffered. Although my heart aches for you to be here with me daily, I find peace in knowing you can be wherever you are needed now.

It’s hard to believe, Mom, that you have been gone from us six years already, although it seems like yesterday that you were Promoted to Glory! You are so very loved and deeply missed by us all. But we know in our hearts you live!

You gave me the best present ever, Mom...the gift of life, and I will never forget all of the unconditional LOVE you gave me. All the good times you and I shared. The times that you were my shield, my comfort and my friend, will always be remembered. You already know that I LOVE YOU with all of my heart and I will never forget you. The day you left me, you took a big piece of my heart with you, a piece that will always be missing until the day we see each other again in Heaven. I will keep the memories, all the kisses, and all of the warm hugs you gave me, deep inside my heart.

National Day of Prayer

Here's an excerpt from George Washington's prayer journal that has inspired me as I prepare this morning for this National Day of Prayer. May it remind us of our great need of Him, who first loved us!

“… Direct my thoughts, words and work. Wash away my sins in the immaculate blood of the lamb, and purge my heart by thy Holy Spirit, from the dross of my natural corruption, that I may with more freedom of mind and liberty of will serve thee, the everlasting God, in righteousness and holiness this day, and all the days of my life. Increase my faith in the sweet promises of the Gospel. Give me repentance from dead works. Pardon my wanderings, & direct my thoughts unto thyself, the God of my salvation. Teach me how to live in thy fear, labor in thy service, and ever to run in the ways of thy commandments. Make me always watchful over my heart, that neither the terrors of conscience, the loathing of holy duties, the love of sin, nor an unwillingness to depart this life, may cast me into a spiritual slumber. But daily frame me more and more into the likeness of thy son Jesus Christ, that living in thy fear, and dying in thy favor, I may in thy appointed time attain the resurrection of the just unto eternal life.”

This morning at 11:30, I will be participating in the National Day of Prayer. Members of our church will be gathering down by the creek at Rufner Plaza, to join together in praying for our country. Won't you do the same this morning?

Today I have just been in awe of my surroundings. I have always loved where we live but today, everything just seems to be so much more beautiful. I am amazed at the wondrous miracle that God has given us. I stand in awe of His majesty!

RBC "Quilts For Kids" Quilting Bee

On Saturday, myself and six other ladies from my church, got together for a Quilting Bee to benefit "Quilts For Kids!" We had so much fun quilting, gabbing, and eating. The fellowship amongst these women is AMAZING!

We had two "newbies" who did an awesome job on making their first quilts! WAY TO GO, CHRISTINE AND CHRISSY! We had such a good time, we are planning another one very soon!

we are trying out a new on-line Math curriculum through a FREE trial. I need to also get started on our curriculum for next year. I need to get on top of things more this year. Flying by the seat of my pants is not always a good thing

One of my favorite things...
spending time out on the porch in the mornings with a hot cup of coffee, listening to the birds serenade me while talking with my Father!

A few plans for the rest of the week...
cleaning up the yard, moving and restacking the wood pile for the stove, more sewing on the quilts and skirt, try to get some more things organized

This is my sister Cathy, and her children, Nemo and Boog. Please pray for them as Cathy has been diagnosed with Lyme Disease. She has been battling this for about 7 months and they are now treating the kids for it as well.
