Men Folk and Breakfast

This morning the men are outside cleaning up the yard, mowing, winterizing the camper, laying mulch and splitting more wood for the winter (a NEVER ending job). While they're outside working, I'm making them a nice, hot breakfast of bacon, eggs and sweet Hawaiian crescent rolls.

Parmesan Crisps

If you are a cheese lover and are looking for a low carb cracker alternative, these Parmesan Crisps are for you. These are so tasty and easy to make! 


For this recipe you will need.... 

Ingredients:
8 ounces fresh grated Parmesan (don't use frozen, it crumbles) 
2 tbsp all purpose flour (or substitute rice flour or gluten-free flour) 
2 tsps freshly minced thyme leaves 
1 tsp kosher salt 
1 tsp freshly ground black pepper 

Directions:
*Mix all ingredients together 
*Scoop level tablespoonful of mixture onto a sheet pan lined with parchment paper 
*Spread each round into 3 inch circle 
*Bake in the middle of the oven at 350* for 8-10 minutes or until golden brown 
*Cool in pan for 5 minutes then loosen with metal spatula and allow to cool completely on a baking rack Remember, you can change some of the seasonings to fit your family's taste.

Homemade Mixes

Every Thanksgiving we have stuffagus (stuffing pancakes), a recipe that my dad used to make. He would put the stuffing together and then make some into pancakes so we could try them and make sure they were seasoned just right before it all went into the turkey. Honestly, I think we ate more beforehand then what actually made it into the turkey. lol 


After I got all my ingredients out, I realized I didn't have any onion soup mix. To the computer I went, knowing there just HAD to be a recipe for it somewhere on-line. After a few minutes, I came across one that sounded good. I skimmed through the ingredients, making sure I had everything that I needed. Once I did, I set to work measuring and mixing. 


At first, I wasn't sure if I would like the onion soup mix, but once I had it simmering on the stove, it smelt just like the boxed mix I have used in the past. I was so excited when I tasted the stuffing......it tasted the same too! YES! 


 I am posting a recipe for Seasoned Salt or Pepper first, as the recipe for the Onion Soup Mix calls for it. You can also use the pepper mixture on so many things and it is great for those on a low/no sodium diet. However, you can make this recipe into Seasoned Salt instead, following the same recipe, just substitute the salt for pepper. 


With Thanksgiving being next month, I need to start preparing and make sure I have everything I need for this recipe. 


For the Seasoned Salt or Seasoned Pepper you will need the following: 


INGREDIENTS: 

1 cup salt or 1cup ground pepper 

2 tablespoons paprika 

1 teaspoon sugar (I used Splenda) 

1/2 teaspoon allspice 

1/2 teaspoon celery salt 

1/2 teaspoon curry powder 

1/2 teaspoon garlic powder 

1/2 teaspoon mace 

1/2 teaspoon dry mustard 

1/2 teaspoon nutmeg 

11/2 teaspoon onion powder 


DIRECTIONS: 

1. Blend all ingredients thoroughly 

2. Store, tightly covered, at room temperature 

3. Label with date and contents 

4. This recipe can be stored for up to two years 


For the Dry Onion Soup Mix you will need the following: 


INGREDIENTS: 

4 teaspoons (which = 1 tablespoon + 1 teaspoon) beef bouillon granules 

8 teaspoons (which = 2 tablespoons + 2 teaspoons) dried onion flakes 

1 teaspoon onion powder 1/4 teaspoon seasoned pepper (recipe above) 


DIRECTIONS: 

1. Blend all ingredients thoroughly 

2. Place in a container, 

3. Label with date and contents 

4. Use within 6 months 

5. This mix is equal to one packet or about 1 1/4 ounces

What A Gorgeous Day

 

It was going to be a chilly but gorgeous day so we got up early to get some things done. We power washed the front porch, cleaned out the vegetable beds, mowed grass, fixed the fence, pulled up trees that self seeded in the yard, hung out laundry and more. It felt so good to be out in the sunshine and work in the yard.

Creamy Keto Taco Soup

I absolutely LOVE soup. I can eat it any time of the year, not just during the cold weather months. I love making it in the crockpot and being able to smell it cooking all day. 

Tonight I had planned on making keto eggplant gratin. It is DELICIOUS and only requires a few ingredients. Unfortunately, the eggplant I just bought a few days ago was already bad when I cut into it so I had to switch gears. I ended up making Creamy Keto Taco Soup. It was very good but spicy. I added sour cream to mine which made it fine for me to eat. I just don't do spicy. 

To make this recipe, you will need.......

INGREDIENTS:
*1 lb Ground Beef 
*1/2 Small Onion, Chopped 
*1 12 oz Package of ¡Yo Quiero!4 Pepper Queso (I used On The Border Queso) 
*2 10 oz Cans of Ro*tel Original Diced Tomatoes & Green Chilies (I used Wal-Mart brand) 
*2 1/2 cups Beef Broth 
*1 tsp Garlic Powder 
*1 packet Taco Seasoning 
*Salt and Pepper to Taste 

Directions: 
*Brown ground beef and onions together then drain. 
*In a large saucepan add ground beef and Queso on low/medium heat. Stir together to mix well before adding any other ingredients. 
*Add the rest of the ingredients and simmer on low for 30 minutes. 
*Add salt and pepper to taste. 

Optional: Serve topped with freshly grated cheese, sour cream, jalapenos, and/or guacamole.

Creative Meal Planning

Most of you know that I I'm a meal planner and food prepper. I like to know what we are having for dinner each night because honestly, I don't like winging it. A few days ago I was watching a video from The Passionate Penny Pincher. She plans and preps as well and had this great idea of putting the ingredients and the recipe inside a basket for each weeknight meal. Wonderful to have everything you need right at your fingertips. 

I have been busier these past few weeks then I have been in a long time. I wanted to make it so that if I'm not home for dinner one night, my husband could just go to the top shelf in the fridge, pull out a basket and know exactly what to do. I still have a couple of things to put into each basket but I am very happy with this idea and I think My Skippy Man will be as well!

A Day With Scooter

Scooter and I had a busy morning running errands and taking trash to the dumps. Then it was time for school and lunch. 

When we were done with everything we decided to make cookies. Somebody had a little trouble keeping her fingers out of the chocolate so we added math to our baking and counted chips.
