No matter how tall the mountain, it can not block out the sun!


Crockpot Corned Beef & Cabbage and Using Leftovers

Dinner is already in the crockpot.  Corned beef and cabbage with potatoes, onions and carrots.  We will get several meals out of this besides just tonight.  
With the corned beef we will also have Ruebens and corned beef hash which will use up the leftover potatos.  We'll also be having a "Meatless Meal" with the other half of the cabbage ~ I'll be making roasted garlicky cabbage steaks and augratin potatoes for another meal.  
For this recipe you will need the following: 
  • 2-3 lb corned beef brisket w/spice packet
  • 1 head green cabbage, roughly chopped
  • 1 1/2 - 2 lbs potatoes or sweet potatoes, chopped
  • 1 - 1 lb bag of baby carrots
  • 1 onion, chopped
  • 4 cups water

Add potatoes, carrots, onions
and cabbage to the bottom of the crockpot. 
 Add corned beef brisket on top. 
Pour water over all of the food. 
Sprinkle spice packet on top of meat
and vegetables.
Cover.....
and cook on HIGH 4-6 hours 
or LOW 8-12.

CRUSTLESS PIZZA

Good morning, all!  I know it's only breakfast time but I've been CrAvInG some pepperoni pizza.  I am supposed to stay away from carbs so a couple of years ago I found this Crustless Pizza recipe.  I wasn't sure how it would turn out but I am happy to say, it is DELICIOUS and even comes off the pan in slices.  WOO HOO!!  
Guess what's on our menu for tonight?  (praying)  😁

For this recipe you will need:

CRUST
  • 1 (8 oz) full fat cream cheese, room temperature
  • 2 eggs
  • 1/4 tsp pepper
  • 1 tsp garlic powder
  • 1/4 cup grated parmesan cheese
TOPPING
  • 1/2 cup pizza sauce
  • 1 1/2 cups shredded mozzarella
  • toppings of choice
  • garlic powder

Preheat oven to 350*.  Lightly coat wbaking dish with cooking spray.  With handheld mixer, mix together all of the crust ingredients until combined.  Spread in baking dish, bake 12-15 minutes, or until golden brown.  Let cool for 10 minutes

Spread on sauce, arrange toppings, add cheese and sprinkle with garlic powder.  Bake an additional 8-12 minutes till cheese is melted and slightly browned.  

ENJOY!  I know I did!

Morning Quiet Time

Drinking my coffee and having my quiet time is something I truly love to do in the morning.  My favorite place to go is on the porch.  There is something about being outside talking to God while being serenaded by His own beautiful birds.  Unfortunately, it is still too cold here so for now, my quiet time has to be inside where it's warm. 



I have a few devotionals that I use, including my Bible, going back and forth between them. It is amazing to me that no matter which one I am using, it has EXACTLY what I am going through and says just what I need to hear for that day.  God truly is AMAZING and always seems to meet me where I am.  

THANK YOU, FATHER for your mercy and grace.......I LOVE YOU!

A Day of Firsts

This post happened in 2015, however, I didnt realize till just today that it never posted so I am going to post it today.

Kiddo and I were going to see our daughter, Bean and her family in Kansas.  Her husband, Tex, was in the Army and stationed at Fort Riley.  In order for Kiddo to be allowed on post he had to have a form of identification.  Since he doesn't drive and has no license we had tonget an ID card for him.
He was extremely nervous to not only have his picture taken......
but also have to give his signature was a little overwhelming for him.
As we were driving home, we just hapened to see the imfamous KRISPY KREME donut sign lit.  When it is lit it means...........
STOP AND GET HERE NOW!  lol
When we stopped, we didn't just get the hot glazed donuts.  Oh, no....I had to get one of these bad boys.
Caramel Chocolate Pretzel.  All I can say is........
