Frozen Peanut Butter Brownie Pie


A few weeks ago it was my turn to be in the nursery at church.  When I returned to our pew after the service, I found a magazine on my purse, opened to a recipe for a delicious looking dessert.  "Hmmm.......I wonder who put that there?"  I found out shortly thereafter that My Skippy Man was the culprit.  He was reading HOMELIFE Magazine when he found this recipe.  I made serveral attempts  in making this pie, but each time I had one of the ingredients missing.

Well, I FINALLY got all the ingredients together and VOILA!

For this recipe you will need the following:

1 Box brownie mix, plus other ingredients required on the package
8 ounces cream cheese, softened
1 cup peanut butter
1 cup milk
1 1/2 cups powdered sugar
1 (8-ounce) container frozen whipped topping, thawed

Prepare the brownie batter according to the package directions.  Evenly divide the mixture between  two 8-by-8-inch baking pans, and bake for half the recommended time.  Mix together the cream cheese, peanut butter, milk, and powdered sugar.  Fold in whipped topping.  Evenly divide the mixture in half, and pour over each of the cooled pans of brownies.  Freeze until set, about four hours or overnight.

YES, TO VBS!

Today was our first day of VBS.  There is a LOT of work entailed in planning and preparing for Vacation Bible School.  Many volunteers are needed for many different jobs.  Teaching and assisting in classrooms, to preparing and serving snacks, to driving the van that picks up and drops off those precious smiling faces of the most AMAZING children are just to name a few.  No job is small....all are extremely IMPORTANT!
In the past I have been a driver, but this year I am assisting my friend in doing crafts.
We have been having a great time and can't wait to see the look on the children's faces when they see what they will be making for that day. 
This is our classroom out in the Youth Building.  Plenty of room and wonderful....

This is our kindergarten class holding their Firecracker Pens. While one of the girls was making her pen she said, "I can't wait to use my pen on our country's birthday that is coming up really soon!"

A Sweet Morning

Feeling so blessed I got to spend some time with my precious friend, Daisy today. I haven't seen her for quite some time so it was nice to catch up and enjoy a nice quiet lunch together on the porch. She also was able to spend some time sketching, something she loves to do.  She has sketched a covered bridge for me and it was BEAUTIFUL so I asked her if she would sketch our home for me.  Skippy absolutely LOVES it here in the peaceful serenity of the hollar so I thought that would be the perfect gift for his birthday.
 
 Thank you, Father, for such a beautiful morning!

Happy National Donut Day / Cinnamon Roll Almond Flour Donut Recipe

Hello, everyone! I'm sorry I haven't been around much lately, but life has just been busy.  I hope you have all been doing well?

 In honor of NATIONAL DONUT DAY, I found a recipe that allows me to celebrate right along with you.  It is made out of almond flour instead of regular flour, making it healthier, much lower in carbs, and something I can actually eat.  

I LOVE baking with almond meal/flour.  I love the nutty flavor and the texture that it gives to my baked goods, however Skippy is not a fan.  He has been a good sport and tries just about everything I make, but he just doesn't care for the texture.

I had been buying it but found it was cheaper to buy raw almonds at COSTCO and grind them myself, so that is what I do. As with any recipe, you can tweak it to suit your family's taste.  Add a bit more of this or a little less of that.  Make sure if you do, you write down your changes.  I will tweak something and LOVE IT, but then when I go back to make it again I find out I have to try and figure it out all over again because I neglected to take a few seconds to mark it down.

For this recipe, you will need the following:

  • 1 1/4 cup almond flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1 tsp nutmeg
  • 1/2 tsp cinnamon
  • 3 eggs
  • 1/4 cup coconut oil or butter, melted
  • 2 TBS honey
  • 1/2 tsp pure vanilla extract
1.  Preheat oven to 350F
2.  Dump the almond flour, salt, and baking soda into the blender



 
3.  Whisk together all your wet ingredients, add to the blender.



4.  Blend until batter is very smooth. Pour into prepared donut molds. I don't have a donut mold so
I used a muffin pan



 
5.  Bake for approximately 10 minutes. DO NOT OVERBAKE or they will be dry



I dipped two in sugar free chocolate syrup and drizzled one with sf caramel syrup, dipped two in
butter and then in a SPLENDA and cinnamon mixture, and then two more in sf chocolate syrup and then sprinkled with unsweetened coconut.


Well, I've gotta run......I hear a cup of hot green tea and a cinna-muffin calling my name! :D
