S'mores Crack Dip

My family LOVES to sit around the fire, regardless of the time of year.   The other night, Skippy  built a fire for me, then he and Kiddo roasted little weenies for dinner and then s'mores for dessert.
However, sometimes you want s'mores but don't have time to get a fire ready.  As I was looking through my pinterest boards, I realized that I had pinned this recipe for S'mores Crack Dip.  This was perfect timing since they have wanted more s'mores but we have been unable to make a fire due to the rain we have had.

As you can see from the picture, this recipe turned out yummy and ooey, gooey.....PERFECT!  
 For this recipe, you will need the following:

INGREDIENTS:
1 cup of milk chocolate chips
2 tbs of milk

1 1/4 cups mini marshmallows
Graham crackers for dipping

DIRECTIONS: 
In a medium sauce pan add chocolate chips, milk and 1 cup of your mallows. Mix continuously over medium heat until melted and smooth. Using a rubber spatula, scrape chocolate mixture into a small casserole dish. Top with remaining mallows.

Place dish under you oven broiler for approximately 60 seconds or until the top has started to brown.

Dip your graham crackers and enjoy!!

Concentrate.  Listen for God's voice calling to you.  Ignore the worldly voices that call for your attention.  There is no need to conform.  Focus on the great I AM!  Rely on His truth.  Contemplate His words and undergo a transformation that goes beyond the cosmetic:  Let the Lord renew your mind, body and spirit!

Meatball Sub Casserole

I found this recipe on facebook and decided to make it for Skippy's birthday dinner.  He said he wanted peanut butter & jelly, but I knew better! lol  Both the men loved this recipe and told me I better make sure I keep it! 


This recipe is easy to make and really is delicious.  I had planned on taking pics as I went along but  got distracted and never got to take any more. 

For this recipe, you will need the following:

INGREDIENTS:
1 (16oz) loaf french bread
8 oz cream cheese, softened
1/2 cup mayonnaise
1 tbsp Italian seasoning
1 lb meatballs - homemade or frozen. If using frozen, thaw prior to using them
1 (26oz) jar spaghetti sauce
2 cup mozzarella cheese
BAKING DIRECTIONS:
Preheat oven to 375 degrees.

1.  Slice french bread into 1-inch slices and place in a lighly greased 9x13-inch pan.  I toasted mine before placing in pan.
2.  Mix together cream cheese and Italian seasoning. Spread over french bread.
3.  Chop meatballs and sprinkle over cream cheese mixture. (I put a 1/2 cup of cheese on top of the cheese mixture)  Pour spaghetti sauce evenly over meatballs. Top wtih mozzarellla cheese.
4.  Bake 25-30 minutes, until bubbly and cheese is melted.

Good Afternoon!

Good afternoon! Some of you have asked if I am closing my blog or have decided not to post any longer but keep my blog open. They answer to both is NO. Life seems to happen so quickly these days and things come up that require my attention that are far more important. This does not mean that I don't want to blog, I DO. I just need to keep my priorities in order. I know you all understand that.

Things here are busy, and I am thankful for that. Today I am working at a slow pace, catching up on housework and getting ready to make some sweet relish for My Skippy Man. I made a huge batch last year and we just finished the last jar this week.
A friend of ours gave us a bunch of cucumbers the day before yesterday so I will cut some up for salad and the rest to use in the relish.
 Our garden was doing WONDERFUL this year; beautiful plants, gorgeous fruit......and then our chickens, deer, and bear realized what was there and POOF, it was gone.  Oh, well......they need to eat too!  :D

Well, it's time to start chopping all those cucumbers.  Praying you all are having a blessed day filled with lots of LOVE!
