What's On The Menu

With all but one of my packages of chicken gone bad this week, I was stuck on what to make for dinner tonight.  I remembered I had a pork roast in the freezer but was at a loss of what to do with it.  While I was defrosting it a bit in the microwave, I rummaged through the cabinet and found a few seasoning packets.
I found a packet each of onion and mushroom gravy mixes.  I put the roast on the bottom, added 1/2 cup of water, sprinkled on the onion then mushroom packets, then added a stick of butter.  I set the crockpot on high, put the lid on and walked away.  Eight hours on high will do the trick.

Well, two hours later, I was wondering why there were no delicious aromas wafting through the house.  I then realized what was wrong......I never plugged the crockpot in! 😆

I now have dinner for tomorrow along with a head of roasted cauliflower. What we'll have for dinner tonight is still a mystery! lol

I am so very thankful that no matter what storms I may go through in my life, my Father will ALWAYS be there with me in the midst of it all!

THANK YOU, JESUS!!

Thirty Days of Thankfulness ~ Day 6

I am thankful and so very blessed to have such a wonderful husband who loves us deeply. He gets up so early every morning, works so hard to provide for his family, doesn't want me to have to work so I can be home to be with Kiddo and to be available to serve others in whatever capacity is needed.  He is MY HERO.

WE LOVE YOU TO GOD AND BACK!! 💕

Baked Bacon

WE LOVE BACON.....but I dislike the mess it makes on my stove while frying. While I was visiting our daughter a few years ago, I had baked bacon for the first time and I loved it.  It was so easy to prepare and there was no greasy stove or grease to contend with. WOO HOO!

I wanted bacon this morning so I took a few pictures to show you how easy it really is......

First I covered my baking sheet with heavy duty aluminum foil
Lay a cooling rack over your baking sheet
Lightly sprayed a cooling rack with a non-stick spray
Lay out your bacon
Bake in a 375* oven for 20-25 minutes or until the color and crispness you like.
Oven temps may very so be sure to watch it
I don't like my bacon as crispy as some do.
This is perfect for me
A delicious breakfast ~ provolone omelette with a few slices of baked bacon and a
mug of hot rum raisin biscotti tea with a little French vanilla creamer.
😍

Now all I have to do to clean up is let the pan cool, remove and throw out the foil, put the cooling rack in the dishwasher and put away the baking sheet. EASY PEASY!

Thirty Days of Thankfulness ~ Day 4

I am thankful for those times when I can slip off by myself and drive down a few back country roads taking pictures, capturing the glorious colors of each season. It is a time when I can have a heart-to-heart with God with no interruptions. And having a sugar-free French hazelnut latte is an extra special treat!
