Sweet Potato And Egg Casserole

Skippy had to go in to work early yesterday morning so I decided to make an egg casserole to be ready for when he got home around noon. Our daughter made this last week and it was great, very easy and packed with lots of flavor. What's great about this recipe is that you can tweak it anyway you need to fit your family's tastes.

For this recipe you will need:
From Our Country Kitchen,
1 medium sweet potato - thinly sliced
12 eggs
1 cup cheddar
1 cup cubed ham
1/2 cup diced pepperoni
1 cup finely chopped spinach
1/2 cup diced onions

Layer your sliced sweet potatoes on the bottom and up the sides of prepared baking dish

Whisk eggs, adding salt & pepper, spinach and onions

Pepperoni & ham

Shredded cheddar

Gently mix all ingredients together

Pour egg mixture into prepared pan

Spreading with a fork to cover the sweet potatoes

Bake at 350* for approximately 30-40 mins

Or till golden brown and set

Let rest for 5 minutes

Meal Prepping

I Need My Coffee

Not only is this a busy week, but it's an early one as well. Our daughter doesn't drink coffee so to make sure I can still have mine, I made a pot this afternoon, drank a mug full then put the rest in canning jars in the fridge. I now have 4 jars to grab on my way out to heat up when I get there!
