Low Carb Crustless Spinach Quiche

This quiche is wonderful and very satisfying.  It has become one of my favorites.

Remember, with any recipe, feel free to tweak it and make it your own by adding ingredients your family loves.


For this recipe you will need the following:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 5 eggs, beaten
  • 3 cups shredded Muenster cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  1. Preheat oven to 350 degrees F. Lightly grease a 9 inch pie pan.
  2. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
  3. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
  4. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

  4. Hi Laura, You look great! I can't believe you have Lyme, my girlfriend also has it and she also gained a lot of weight. I am going to tell her about you and your diet.
    Also, thank you for not forgetting about me over at my little blog. I have been not in a good place lately. I am working too much, my mother is getting worse and it's hard to keep up with everything. I have to say I teared up when I saw you visited me. I haven't blogged in a long time, not even my animal blog. So I am trying to start up again because it makes me happy visiting everyone. For me it's my happy escape.
